Witloof chicory is delicious as a salad with cheese and walnut, or with ham or smoked salmon.
Culture Tip:
1. Sowing: Sow in Feb- Mar in rows 30 cm apart.
2. Thinning: At 2-3 leaf stage, thin to allow a plant every 10 cm. Pull the roots in October-November, shorten them to 20 cm and leave only 3 cm of leaves from soil level. Dig a pit 40 cm deep in a bed of soil, plant your roots side by side then indulge with sand or a very light soil. Water thoroughly for 15 days later then cover with a thick layer of straw and protect all with sheets or cardboards.
3. Harvest: Harvest from December to March.
